Recipe: Breakfast Cookies

My family has been using this recipe for breakfast cookies for a long time. We all really enjoy these, and Adalia and Judah always want me to save them some that they can take to school.

Breakfast Cookies

Ingredients:

  • 1 cup butter
  • 1 1/2 cups peanut butter
  • 1/2 cup white sugar
  • four eggs
  • 3/4 cup milk
  • 2 teaspoons vanilla
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3/4 cup sunflower seeds
  • 3/4 cup chopped peanuts
  • 4 cups oats

Combine the butter, peanut butter, and sugar. Add the eggs, milk, and vanilla. Mix seperately the flour, baking soda, salt, sunflower seeds, and oats. Mix wet and dry ingredients. Roll into balls with hands and flatten slightly onto cookie sheets. These will not spread much, so they can be placed close together. Bake for 15 minutes.

These breakfast cookies are easy to make, and delicious with a glass of milk. The original recipe doesn’t call for chopped peanuts, but I like to use them if we don’t have sunflower seeds.
